The brewery was a brand new turnkey system built by Specific Mechanical
Systems from Canada. It is one of the three Specific breweries in the
city.
Specific brewhouses feature a diverter panel that keeps the brewhouse
compact. The challenge in building a brewhouse is always how to get things
from one place to another - without having to reconnect hoses or valves - while
keeping it compact.
In order to get water/wort from one place to another on
a Specific brewhouse, U-shaped
pipes are put onto the diverter panel to divert the flow from one vessel,
through a pump, to another vessel. It looks confusing at first, but
there are many configurations that can get anything anywhere in the brewhouse.
The brewery is a 15 barrel system. There are 3 15 barrel fermenters and
1 30 barrel fermenter. There are 6 15 barrel serving tanks and 1 30 barrel
serving tank. The 30 barrel tank is usually reserved for high volume beers
like the wheat or the amber. The 30 barrel fermenter can be used for a 15
barrel batch by simply filling it only half way.
 
The
tap system is the best in the city. It has four sets of pumps that push
the beer to the taps. This is especially important when pushing beer to a
second floor. The pumps move the beer, while only having about 15lbs of
pressure in the tank. This keeps the beer from becoming over carbonated,
while still pushing it at the right velocity.

Vigorous fermentations push out a lot of yeast and some cold break into the blow
off bucket. If you see this in a brewery, it's not ugly or dirty, it's
beautiful.
The brewers use many types of grains from Great Western, Hugh Baird,
Durst, and
Crisp. Hops all come from Hop Union or Yakima Chief.
