The brewery is one of the three Specific
Mechanical Systems turnkey systems in San Francisco. Beach Chalet was
the first to install one of these systems in San Francisco. It is a 15
barrel system.
Specific brewhouses feature a diverter panel that keeps the
brewhouse compact. The challenge in building a brewhouse is always how to
get things from one place to another - without having to reconnect hoses or
valves - while keeping it compact.
In order to get water/wort from one place to another on a
Specific brewhouse, U-shaped pipes are put onto the diverter panel to divert the
flow from one vessel, through a pump, to another vessel. It looks
confusing at first, but there are many configurations that can get anything
anywhere in the brewhouse.
The kettle is heated by steam, and the mash tun is also steam
jacketed, allowing the brewers to do stop mashes, or even decoction
mashes. But without an agitator, the brewers have to stir the mash by hand
while it is heating up. That could be a very sweaty ordeal!
 They
have 4 fermenters and the cold room is at the far end of the brewery (you can
see the door at the back.
There are 7 bright tanks (and a lot of hops) in the walk
in. The glycol reservoir is also in the cold room, removing the need for a
separate chiller.
The
grain silo is in the back of the restaurant.
There are windows behind the kettle in the brewery. They look out at
the bar and dining room and also offer a great view of the beach. Not a
bad way to start the day, is it? Brew beer and stare at the Pacific Ocean.
